GRILLED MARGHERITA PORTOBELLO MUSHROOMS
=> 4 Servings; Weight Watchers Recipe = 2 points per serving (1 serving = 1 portobello mushroom)
Ingredients:
4 Portobello Mushrooms, stems removed, wiped clean
1 Spray Olive Oil Cooking Spray
1/2 c. Shredded, part skim mozzarella cheese
1/4 tsp. garlic powder
1 tsp. dried oregano
2 medium plum tomatoes, sliced 1/4" thick slices
8 fresh basil leaves
Directions:
1. Heat grill or grill pan to medium-high heat.
2. Coat washed mushrooms with cooking spray; place on tray stem side down. Cook, covered for 4 minutes. Uncover and using tongs, flip mushrooms cooking for another 4 minutes.
3. Meanwhile, in a small bowl, combine chesse, garlic powder, and oregano.
4. After mushrooms have cooked for 8 minutes, move them back to the tray, reduce grill heat to medium-low. Top each mushroom cap with 2 Tbsp. seasoned cheese.
5. Place mushrooms on grill and cook, covered until cheese melts, about 2 minutes.
6. Remove mushrooms to a serving plate and top with tomato and basil.
